Seared Ahi Tuni with Blood Orange and Ras el Hanout rub
Easier to make than you would expect
The burgers are mixed with kosher salt, pepper, roasted cipollini onions and roasted garlic. After they are coated with a mixture of paprika, cinnamon, turmeric, ginger, chile pepper and cardamon. This creates an intensely black sear and sweet and smokey taste. Instead of cheese, I topped with baba ganoush.
